At the young age of 16, Thomas took a position as a dishwasher in a local restaurant, where he worked his way through nearly every position, eventually making it to the line to cook before turning his attention to the dining room, where he tried his hand at serving and bartending. With both front and back of the house operations experience and a growing passion for the hospitality industry, Thomas took his first restaurant management role at the Steak Loft in Mystic, Connecticut, a New England institution, where he excelled in a General Manager role for seven years.
Working his way up the hospitality food chain, Thomas jumped at the opportunity to join the team at celebrity chef Tom Colicchio’s Craftsteak at Foxwoods Resort and Casino in Mashantucket, CT in 2008. At Craftsteak, he proudly served as a member of the restaurant’s opening team and led the staff as General Manager through 2013, before moving to New York City to serve as the General Manager of Colicchio’s Craftbar.
More recently, Thomas joined the Boston-based The Varano Group, where he serves as General Manager of STRIP by Strega, restaurateur Nick Varano’s interpretation of an upscale, modern, high energy Steakhouse that’s housed in the new Boston Park Plaza in Boston’s stylish Back Bay neighborhood.
Thomas continues to enjoy cooking on his days off, as well as spending time with his wife and two children.
